So as most of you know I LOVE food! I can't get enough of it and I love to eat. My husband tells me I am a fatty trapped in a skinny person's body. As much as I like to deny this.....alas I must admit I am fat on the inside. . .
Anywho, this is the month for cooking! The windows are open, it's cold outside and I don't feel guilty about heating up the house. My freezer cooking has been my family's favorite days because they get to eat all the extras and taste test everything. I have been freezer cooking more than most freezer cookers. They usually do this once a month or week, me I have been doing it a few times a week, averaging around 3-5 meals per cooking day. I can't help it not only do I like to eat.... I LOVE to cook (it's those damn dishes I hate!) Luckily the HUBBS is willing to do them since I make all his favorite dishes and I've introduced new foods each week which have become the house favorites. I have branched out and gotten alot of recipies from friends and once a month mom. Although I admit I rarely stick to recipies because half the time I don't have or like all of the ingredients.
I wanted to tell you guys out there that love pepperoni pizza and those that also have kids about pizza caserole. Pizza caserole is supper easy, kid and hubby approved.
Sautee about 1/4-1/2 a chopped onion, and about 2-3 cloves of chopped garlic in some olive oil. Add 1lb ground beef cook til done, drain. next boil about 1/2lb-3/4 lb of rotini noodles (depends on how many noodles you want) when noodles are done throw in with the beef, get a package of pepperonis and cut ALL of them in fourths. Put the pepperonis in the beef/ noodle mix now add Ragu pizza sauce may have to use 2 jars. Pour everything into a casserole dish with a lid, top with cheese your choice I used cheddar, and bake till bubbly and warm or freeze til next time!
I hope you and your family enjoy this as much as I did. You may also add other items you like on your pizza, mushrooms, peppers, chicken instead of beef, etc.

PS... for those of you who are curious, I have my breast ultrasound on Monday to check out this knot. We are hoping for just a fibrous cyst and that it is nothing. In fact I'm gonna go ahead and say that's what it is, maybe that will give me some good luck?

ReplyDeleteI am totally a fat kid too. <3 Food!! And not the veggie kind either real hearty put meat on your bones food. HIGH FIVE from one girl who isn't afraid to eat to another. I will let you know how your pizza casserole comes out next week when I make it.
